If you love Greek food as much as I do, you will love this easy recipe for Greek Chicken Pitas in the comfort of your very own kitchen. It’s a simple recipe, where the only actual cooking you will have to do is for the chicken. The rest is just stacking and filling your delicious and warm pita bread with some fresh favorites. I hope you enjoy this recipe. It‘s also great to make with your children. It’s gives them the opportunity to build their own pita. Making them eat it is up to you. LOL.
Ingredients
(Total Servings is about 4-5)
Proteins
3-4 Boneless Chicken Breast
Produce
1/2 Lemon, juiced
1/2 bunch of Fresh Dill
Grape Tomatoes, halved (to taste)
Red Onions, sliced (to taste)
1 head Green Leaf Lettuce
Baking & Spices
1 tsp Salt (more, if desired)
1/2 tsp Cracked Black Pepper
1/2 tbsp Garlic Powder
Condiments
Tzatziki Sauce (You can find this recipe in my When I Dip, You Dip section.)
Oils and Vinegars
2-3 tbsp Cup Canola Oil
2 tsp Extra Virgin Olive Oil
Directions
Wash the chicken breasts and cut into 1 inch cubes. Add the cut chicken to a medium sized bowl and dry with paper towels.
Heat your cast iron skillet or frying pan on Medium/High Heat. Add 2-4 tbsps of Canola or Vegetable Oil. (Tip: If using a cast iron skillet, be sure to heat the pan before adding in the oil.)
Season the cubed Chicken with 1 tsp of Salt, 1/2 tsp of Cracked Black Pepper, 1/2 tsp of Garlic Powder, 1/3 bunch of chopped Dill, the juice of 1/2 Lemon, and 2 tsp of Extra Virgin Olive Oil. Stir well.
Add the seasoned chicken to the hot skillet and cook through. They key is to get a beautiful golden brown color on each piece.
While the chicken is cooking prepare your vegetables by slicing the Grape Tomatoes in halves Also cut thin slices of Red Onion. There is no measurement for these as you should prepare each pita based on what your guests prefer.
When the chicken is fully cooked remove from the heat and let rest for 2-3 minutes.
Warm the pita bread in the microwave for 10-15 seconds. (Tip: Do not go beyond this time in a microwave or your pita bread may become chewy.)
To plate, layer the pita bread (in order) with 2-3 Green Leaf Lettuce leaves, a slather of Tzatziki sauce, Cooked Chicken, Red Onions, Grape Tomatoes, and more Tzatziki Sauce.
Now you have something cooked from the SOUL. Serve it to the CULTURE!
